Mission Variety Organic - COOC Certified EVOO
Butter sweet with a delicate fruitiness. Unlike the non-organic mission oil, this is much stronger but still fruity oil. The Mission olive is the oldest variety in California, having arrived with Franciscan padres in the late 18th century. It is oval in shape and medium in size. The skin turns deep purple but changes to jet-black when ripe and the flesh is very bitter but firm. Ripening rather late this is the most widely used olive for cold-pressed oil in California. The trees are vigorous, heavy bearing and more cold resistant than other cultivars. Grown at the old missions in California.

Manzanillo Variety Organic - COOC Certified EVOO
A moderately strong green oil from old orchards in Northern California. Large, rounded-oval fruit with brilliant purple skin, changing to deep blue-black when mature. These olives resist bruising, ripening early, several weeks earlier than Mission.
Along with the Mission, the Manzanillo is a single variety oil. Certified organic by the California Certified Organic Farmers.

Tuscan Valley Organic - COOC Certified EVOO
A full, fruity, well-balanced flavor, buttery entrance with a mild pungency, finishes with a pleasing bitterness. Certified organic by California Certified Organic Farmers.
This oil is made from a blend of predominantly Frantoio, Leccino, San Felice and Itrana olives with some Manzanillo, Maurino and Pendolino olives. The olives are picked medium-ripe by hand and brought immediately to the certified organic mill right next to the orchard so that they can be milled without any delays. The most careful production processes are used, without adding any water or heat to make pure olive juice that is as healthy and delicious as possible. This oil is high in anti-oxidants, which means that it has a relatively intense taste.

Central Coast Varietal - COOC Certified EVOO
A full, fruity, well-balanced flavor, buttery entrance with a mild pungency, finishes with a pleasing bitterness made from Frantoio, Mission, Arbequina, Baruni, Pendolino varieties. Its fragrant aroma is a mixture of grass and wood with sweet undertones. Although many may argue about the effect of terroir on olive oil, these aromas are reminiscent of the Santa Ynez region where the olives are grown, with its rolling hills and lush valley. In both bouquet and flavor, one detects an earthy mixture of green pepper, marjoram, and just a hint of cardamom, which is followed by a long peppery finish.
